What is organic tigernut flour?**
Despite the name, tigernuts are not technically nuts. Instead, they are the small, raisin-shaped and chickpea-sized tubers that grow on the Cyperus Esculentus plant, which is cultivated in North and West Africa, as well as the Mediterranean. These edible tubers are also known by many other names, such as "chufa," "nut grass," yellow nutsedge" or "earth almonds." Once harvested, the tigernuts are then carefully peeled and milled into a light, creamy, brown powder with a slightly sweet flavor.
Tigernut flour contains absolutely no nuts, grains or gluten, which makes it the perfect solution for those who are sensitive to certain foods or simply prefer to avoid these food substances. Additionally, this starchy flour is also much healthier and more nutrient-dense than most regular all-purpose flours. Make your own tasty tigernut flour cookies**
This salty-sweet cookie recipe makes approximately 9 cookies.
- ½ cup Health Ranger Select Organic Tigernut Flour
- ¼ cup Health Ranger Select Premium Manuka Honey MGO 514+ (15+ NPA)
- ½ cup organic tahini
- 3 Tbsp water
- 1 Tbsp organic flaxseed meal
- 1 tsp baking soda
- 1 tsp baking powder
- 1 pinch Health Ranger Select Pink Himalayan Salt (fine ground)
- Place parchment paper on a baking sheet and preheat the oven to 350 F degrees.
- Create a "flax egg" by thoroughly mixing the water and the flaxseed meal together in a small bowl.
- Allow the “flax egg” mixture to sit in the fridge for 5 minutes.
- Thoroughly mix the tigernut flour, baking soda and baking powder together in a separate bowl.
- Add the flax egg mixture, manuka honey, tahini and salt to the dry ingredients. Mix thoroughly until you reach the consistency of cookie dough.
- Form approximately 9 cookies with the cookie dough and place them on the baking sheet lined with parchment paper.
- Bake the cookies for 10 minutes.
- Allow the cookies to cool on a cookie rack and enjoy!
